I am a coffee addict and Mystic Monk Coffee that is roasted by the Wyoming Carmelites is my favorite.
The Wyoming Carmelites roast many types of coffee, light, medium, medium dark and dark roast coffees. My favorite are the light roasts of Carmelite Coffees. The light roasts are more of a pure taste lacking the dark smokey flavor. When you drink light roast coffees, you can taste the individual bean characteristics.
